When you are having Chinese dim sum or fried appetizers (fried won ton, fried dumplings, fried spring rolls, crab rangoon, etc), shrimp dumplings, fish cakes, or turnip cakes, try pairing the food with blanc de blancs, champagne, or other sparkling wine. Such wines offer crispness and refreshes the palate.
